Cheeseburger Macaroni Salad




I posted a while ago about how we often eat boxed dinners and what I do to add some nutritional value.  As much as I'd prefer to make a healthier meal, sometimes a quick-and-easy boxed dinner is just too tempting.  Well, today I was inspired to spruce up my Velveeta Cheesy Skillet-Cheeseburger Macaroni...

into a Cheeseburger Macaroni Salad!

First, I prepared the boxed dinner as instructed on the back of the box.

What's usually on top of a cheeseburger?  Lettuce, tomato, and onion!  I thought these would be great additions to my meal, as well as add in some nutritional value!

After the cheeseburger macaroni was ready, I filled my plate with mixed baby greens.

Then, I spooned enough cheeseburger macaroni to cover the greens.

Afterward, I topped the pasta with tomatoes and onions.

Last, I mixed everything together and enjoyed my dinner (in front of the TV).

I must say, this was a great idea!  The veggies added a really nice fresh taste.  Plus, I ate less of the macaroni to make room for my add-ins.  Now, let's see if I can get the husband to eat it this way next time...

  1. I love adding extra veggies to boxed dinners. It makes it semi-homemade and so delicious!

  2. I'm always big on adding in veggies to lighten up things. Sometimes you have to go "semi homemade" style!
