Healthified Chicken Tortilla Casserole

Yesterday was quite a long day at work!  I spent about 4 hours after school packing up my classroom and switching with another teacher.  It's made me realize what a hoarder I am when it comes to teaching stuff!
And this is just the stuff I brought home...
We are switching teaching assignments, so you can imagine how crazy things have been this week!  You may be wondering why, but I can't fully explain just yet.  Be patient :)  I promise to fill you in.





In Tuesday's post, I mentioned a yummy dinner I made this weekend!  I found the recipe for Healthified Chicken Tortilla Casserole thanks to Pinterest and knew I had to try it out.
You can find the recipe here from Live Better America.  I followed the recipe exactly, with the exception of using a red bell pepper rather than a green bell pepper.  Joe thinks green peppers at too potent (though I love them), but this dish is so flavorful, I doubt you could really taste the pepper!

One of the things I love about this recipe is the healthy swaps they incorporated in the recipe.
One thing that surprises me is the decreased amount of cheese.  I could really taste the cheese, and this cheese lover couldn't imagine adding more!

Good stuff!  I think this has become an instant favorite in our house, especially with the beverages we had on the side.

Question for you: Do you "healthify" common recipes?

  1. my casseroles never cook right :/ the outsides will be crispy but the inside doesn't seem cooked enough - any suggestions?

    1. Hmm, that's strange...I would try spraying some non-stick spray beforehand (will keep the outsides from sticking to the pan) Also, maybe put it on a lower shelf in the oven?
